Legrand Pass Seymour 1228I Manual Controller 30A IVORY Maintained Contact DPDT... Would like to use this on two different LED lights (at different times) and would like to know if it will work for that

Yes, this DPDT (Center Off) switch would work for you application, but it is likely overkill for that application. A SPDT (Center Off) switch is cheaper and would also work as long as each of the 2 lights uses only one 120V hotleg (not 240V via 2 hotlegs in which case you WOULD need the DPDT Center Off type). Additionally, this switch can handle 30 amps. Comparable 15 amp and 20 amp switches are cheaper.
