This was installed by my builder (with a metal door and lock), and I'd like to find a plastic (vented) door which would add some space for larger devices. Is that an option? Is there is a list of compatible accessories?

Unfortunately there are no options for an enclosure of that size. The larger enclosures have box extender kits that allow the box to protrude from the wall. The metal enclosures only have metal doors. If you need a plastic door, you will need to install a plastic enclosure which will require some amount of drywall work to

can you add a cover to it?, and if so, which one.thanks

You have a few options. Part EN2060 is just the hinged cover with lock Part EN2020 is a screw on cover Part EN2050 is the 20 inch metal enclosure with hinged lid and lock. this would replace buying the two parts separately.
